I can't find the coconut milk I like in stores anymore. I did find some coconut milk soup base, though, but I'm wondering what is the difference. Could I use the stuff packaged as soup base in my smoothies and cereal?

It's not exactly the same, but I stopped using coconut milk years ago. These days I use a block of creamed coconut and just slice off what I want and mix it up with water. It keeps infinitely longer and is really easy to make up as required. Side by side you can tell the difference, but not by much, while a week apart I think you'd struggle to be sure which was which. I suspect that most coconut milk is made up in the destination country in precisely the same way I do.

Interesting. Is it hard to find a block of creamed coconut? Does it have anything added to it? When I read "creamed coconut," I think of sugary syrup, which is what I buy in a can for making cakes and things.

This is the stuff I have in mind, I use it in Thai curries and soups; it definitely isn't sweet.

Here's the first US version I could dig up:

Give it a go!

FYI

I make a chowder that called for dairy in the form of half&half. Thought one day to substitute unsweetened almond milk for the dairy, suspecting it could possibly change things not to my liking. Surprisingly it turned out great, didn't change a thing except to eliminate saturated fat calories. Was quite surprised.

So I think substitutions can work.

I don't like almond milk. I still have a little in the fridge that I don't want to waste, but it ruins the taste of my smoothies. I've tried different brands, different milk alternatives, and the only thing I like in my smoothies is So Delicious brand coconut milk. I tried the Silk brand coconut milk as well as their cashew milk and soy milk. The soy milk is tolerable. I like it in coffee and cereal, but not smoothies. The cashew milk was absolutely disgusting.

I've tried all available to me and it's really only coconut milk I like, but not the Silk brand or any of the refrigerated brands I've tried. They put thickeners in it or something, and the texture is fucking gross.

I think I'll just buy a carton of the coconut milk soup base and see if it works in smoothies. If not, I'll make some soup and continue looking for another suitable coconut milk. I'm going to look for the creamed coconut, too.

Thanks, guys!

Milk is produced by mammals. Calling anything else 'milk' is just nuts. (or soy).

I'm pretty sure that coconut milk is produced by mammals, working on farms and in factories... ;)

Yeah, but it's hard work; no sooner have you sat down in your little three-legged stool than the bloody coconut kicks the pail over.

We'll call it milk if we want to. So there.

Nuts.

Die mad about it. :p

Oh, don't you worry, I shall do exactly that. My fury will last beyond the grave.

I suspect that you have your milking stool the wrong way up. That's probably what is upsetting the hedgehog.
