I can't find the coconut milk I like in stores anymore. I did find some coconut milk soup base, though, but I'm wondering what is the difference. Could I use the stuff packaged as soup base in my smoothies and cereal?

It's not exactly the same, but I stopped using coconut milk years ago. These days I use a block of creamed coconut and just slice off what I want and mix it up with water. It keeps infinitely longer and is really easy to make up as required. Side by side you can tell the difference, but not by much, while a week apart I think you'd struggle to be sure which was which. I suspect that most coconut milk is made up in the destination country in precisely the same way I do.

Interesting. Is it hard to find a block of creamed coconut? Does it have anything added to it? When I read "creamed coconut," I think of sugary syrup, which is what I buy in a can for making cakes and things.
FYI
I make a chowder that called for dairy in the form of half&half. Thought one day to substitute unsweetened almond milk for the dairy, suspecting it could possibly change things not to my liking. Surprisingly it turned out great, didn't change a thing except to eliminate saturated fat calories. Was quite surprised.
So I think substitutions can work.
