The sheep is, oddly enough, just a very literal representation of an actual Bible passage. Consequently you see that creepy motherfucker in a lot of religious art before the Victorian era.
"And I saw between the throne (with the four living creatures) and the elders a Lamb standing, as if slain, having seven horns and seven eyes, which are the seven Spirits of God, sent out into all the earth. (Rev 5:6)"
When people refer to Jesus as the "lamb of god", it sounds all sweet until you read the description of the lamb in question.
There is no way to make this animal look more cute than alarming, and Jesus the monks tried.
