The sheep is, oddly enough, just a very literal representation of an actual Bible passage. Consequently you see that creepy motherfucker in a lot of religious art before the Victorian era.

When people refer to Jesus as the "lamb of god", it sounds all sweet until you read the description of the lamb in question.

There is no way to make this animal look more cute than alarming, and Jesus the monks tried.
 
The Gorleston Psalter (circa 1310-1324) contains quite a few grotesque marginalia. Here is one of them, a naked bishop berating a pooping cleric.
