What would be the best way to do this? I need some kind of voice recognition that will spit out text.

No, but this would be an ideal project for one. Dragon Dictate is a piece of shit. It requires a lot of training which is useless if you want to use videos from different sources and it completely hammers the CPU. Now I'm working on extracting the Closed Caption stream.

Yeah, my understanding is that it works pretty well if well-trained, a good environment and a good speaker. It does pretty poorly if you fail any of these requirements. You still do have to eyeball the results because it can do some hilarious stuff at times.
