Blazing Saddles couldn't be made today because it was made in the 60's. Some comedies are born out of their own time. While they can be appreciated today, like Blazing Saddles is, it would be difficult to put such a movie like that together today. Its been said that Blazing Saddles could never be made in today's world, despite the fact that it is essentially a satire on racism and shows how ridiculous it is. Its a great movie. It seems people today have trouble taking into account the context and seeing a serious subject being presented in a humorous light.
It is also very important to recognize craft. Movies like Blazing Saddles and Life is Beautiful were crafted around extremely difficult subjects, and in order to work, they must be crafted very well by masters of comedy.
Actually it was made in the early 70s. It's my favorite comedy of all times. It satirizes many things, primarily old western, "Destry Rides Again". Mel Brooks' movies are pure genius. It would be insane to try and remake them. Actually, many if not most of his movies are satires of previously made movies.
If some people think that "Blazing Saddles" is a racist movie, they are ignorant or super sensitive. It basically makes fun of dumb as racist white people. The hero is a black man. I can't imagine anyone stupid enough to consider that movie racist. But, I do agree that it's one of a kind and no remake could ever compete with the original. I watch that movie at least once a. year and it still makes me laugh. My husband and I watched it recently and the governor reminded us of Trump. He was racist, sexist and stupid. That movie is timeless.
There are very few remakes that I like, and I don't have a problem accepting that they reflect the times in which they were made. For example, "12 Angry Men" was a fantastic movie with great acting, but all of the jurors were male. I can't imagine a remake being better than the original.
