I believe he origins of information theory began with telegraph followed by the Teletype machines.

A spinning 'daisy wheel' printers controlled by a remote keyboard goes back to the 19th century.

Shannon helped put digital continuations on a general math basis. He related electrical bandwidth of a communication channel to the signaling rates.

Jaquard Looms pre-date the electronic telegraph by a century or so, and IMO are a better candidate for the origins of Information Theory.
