If you want a good paleontology doc, AppleTV's new series Prehistoric Planet is completely blowing me away right now. Brilliant and beautifully animated. I also really liked the Curiosity Stream series Ancient Earth, which is not as fancy on animation, but cast light on some paleo subjects not usually covered in documentary form: the Permian era, the legacy of the ancient insects, and others.
