What Are You Eating Today?

I took my brother out for lunch today for his birthday. When I asked him where he wanted to go he said "Golden Corral."

That's one of the struggles for us, we spend too much on take out these days. So if we cook we have to keep things interesting for the kids.

I'm starting to get why a lot of parents can't get their kids to eat, no one knows how to cook anymore. I'm lucky I just spent the past two and a half years learning, it's paying dividends now.
We never experienced that problem. When the kids started eating solid foods we used a hand grinder to grind up whatever was on the table, essentially making it into baby food. And then of course after time we didn't have to grind anymore. We rarely ate out and never ordered out back in the day.

Your meals sound complicated compared to what we ate so you are obviously spending much more time preparing meals. We never consumed much processed foods, never any hot dogs or chips or sugary drinks, always just ate basic food, never fast food. In retrospect it didn't seem tedious to prepare food. It was easy and fun.

I agree, however, that home cooking doesn't happen like it used to. From a nutritional standpoint that's a big negative.

We keep things simple for the most part, but do try to rotate meals in and out as our toddler's interest wanes. He'll usually eat whatever we make, especially the meat, but if it's too repetitive or not flavorful he'll sometimes leave a lot on his plate. We don't micromanage or force him to eat anything as we figure his appetite will regulate itself. And we also avoid processed foods.

But sometimes I do try to make a better than average meal when time and energy permits. Both of our boys are young so there are some days when it's hard to get the energy to cook anything at all, let alone something novel. It's those days we'll usually grab soup and sandwiches from a nearby shop.
 
We ordered chinese take-out for our NYE meal. Apparently the restaurant was overwhelmed with orders and it took an hour and 45 minutes for my wife to get the order. Pork egg foo yung for her, mongolian beef for me. It was luke warm when we got it home. Apparently it was done at the proper time but the manager forgot to let us know it was done.
 
2022 was the year that I learned that Sriracha is a seasoning, not a condiment. Too spicy to use directly, but fantastic when mixed into a soup or sauce.

Our local soup place makes good soup that's too bland, sriracha is exactly what it needs.
 
Today I cooked a hot dog with onions and peppers, microwaved a potato, and had it with mustard.
 
A new fast but tasty breakfast for me.

Set a pile of garlic with some peppers and onions frying in oil.
Scramble eggs and add hot sauce and curry powder heavy on the curry,
When the garlic is about done add the eggs. I like the garlic to just turning black.
 
Spaghetti with pesto sauce for lunch, and we'll get either Greek or Chinese food delivered for dinner. We have outstanding Chinese restaurants in this area.
 
For my very long-suffering (married to me for over 42 years) wife, I am making a garden salad, and seafood and leek risotto. My wife loves risotto, and the seafood here are scallops and shrimp (both her favorite). I've never made nor had this before, so it will be an adventure.

The this risotto has fennel and saffron in it.
 
Tonight I made another favorite of my wife's (and me): lamb burgers. The recipe is to mix in with one pound of ground lamb the following:
2 tablespoons of bread crumbs,
1 egg,
1/2 cup of chopped green onions,
4 cloves of minced garlic,
1 tsp of dried oregano,
1/2 tsp dried red pepper flakes,
2 tablespoons of chopped mint or chopped parsley (depends on whether you want a mint flavor or not),
1 tsp dry sherry,
1 tsp white wine vinegar,
1/8 tsp of salt (optional in my opinion),
1/4 tsp of ground black pepper (also optional in my opinion), and
2 tablespoons of chopped cilantro (definitely optional in my opinion).

This makes 4 quarter pound burgers. I grill them depending on my whims for about5 to 7 minutes and then flip them over to grill for another 3 to 5 minutes.

Funny thing is that both of us used to be vegetarians, and here I am voluntarily eating lamb!!!!
