Other than your gene has a specific and singular observed function in one experiment with a few individuals your 'example' demonstrates very little. I could no more jump to "everything is fully determined, one set of ways or another, at every second" than presume that because citizens remember Icarus flew too close to the sun that what they claimed was an observation.
Meaning? Whatever the specific test, that test only provides some evidence of some causal relation for some specific circumstance. Generalization requires accumulated evidence of some specific operation without exception over every observation. A very high criteria indeed. Six sigma is nice but it doesn't make fact. Determinism is concluded because in every experiment B results from A. However, we are caught in a situation where we can't be everywhere at all time so we won't ever achieve conclusive evidence of determinism. We will just keep advancing until we fail. Not a bad place to be. Much better than looking inward for solace.
Take the expansion of the universe discussion ongoing. We surmise because some supernovae appear to be alike that all of those that look alike are the same. If they aren't then our metric for expansion measurement is gone. Poof. No clear theory.
