If that's the case, then why are there fewer Mormons and Buddhists than atheists in jail? Wouldn't a prisoner be better served by claiming to be either before claiming to be atheist?
While I have no doubt that there are a lot of "jail cell conversions," that alone is not enough to explain what we see in the data.
