And note that running quiet at high speed isn't really something that will happen. Go too fast and you strip the rubber tiles off your sub. You get away from that torpedo but now you're a much bigger target for sonar. And a sub at 20 knots is basically blind.

You shove that torpedo out with a burst of compressed air and the sonar operators of everyone nearby are going to be screaming "launch transient!" Make your torpedoes launch themselves (using their propulsion system) as you don't get that telltale burst of compressed air.
