I accidentally bought Roma Tomatoes twice this week so took care of the problem with one of Marcella Hazan's sauces:
- 2 lbs, peeled, coarsely chopped tomatoes (should be Roma)
- 5 tbsp butter
- 1/2 an onion, peeled but unchopped
- salt to taste
You cook on a very low simmer for 45 minutes with the onion immersed in the tomato, then discard the onion when done. This time I also crushed, but didn't mince three cloves of garlic and added them in with twenty minutes left, discarding at the end. Very good results.
