Oxtail Marmalade? Isn't that just sweet and sour (minus the vinegar) oxtail?
 
Just hosted one of our cooking parties, where we have three other couples over and we all cook together. Today's theme was "booze, booze, and more booze", so we had:
- Pink grapefruit vodka punch
- Bread with chardonnay-infused feta cheese spread (a la Fleming's)
- Penne with vodka cream sauce and Italian sausage
- Salad with freshly-made champagne vinaigrette dressing
- Cherries Jubilee with a brandy flambe

The vodka cream sauce was the best part; we used the recipe at http://emerils.com/127187/pasta-vodka-sauce-and-sausage .
 
Waded back into Marsala for the first time in a long time. Turned out well. First time involved heavy cream. This was just marsala with onion, garlic, mushrooms, flour. Got confused with the recipe. Said I needed to dress the pan with the marsala. I was really confused because no meat had been cooked, in my kitchen or in the recipe. I has just added flour, so it didn't seem to make sense to remove the food mixture. So I just added the marsala, stirred, then added the vegan beef broth. Very wet! Added a tablespoon of cornstarch and cooked until it was thick.

Served it one seitan I also made earlier in the day and cut up Idaho potatoes that were served plain.

I'll be repeating this, with a little more Marsala in the mix for Bunny Day this weekend. Might substitute the baby portabella with oyster mushrooms, if available.
 
Pumpkin Soup. A delicious winter warmer.

950g of pumpkin, 120g of Parsnip, 400g of sweet potato, a teaspoon each of mustard powder, ground cumin, ground coriander, tumeric and chilli powder, a few grinds of salt and pepper, 1L of water... simmer until the vegies fall apart and blitz.

And only 520kj per serve - even when served with a dollop of plain greek yoghurt.
 
Seitan Marsala for bunny day. About 1/2 pound of white mushrooms, 1/2 pound oyster mushrooms, two onions, 1 cup of marsala wine, 3 cups of vegan beef broth, 8 cloves of garlic, about 1 pound of seitan, 4 tbsp of flour, 2 to 4 tbsp cornstarch.

Saute onions and garlic in 2 to 3 tbsp of oil, then add mushrooms until tender. Then mix in flour. Then add marsala, let bubble then add the broth. Cover, let thicken, stir it occasionally.

Seitan is just seitan cooked in oil. Served with boiled potatoes.

I think I need a better Marsala wine, the type available in the "cooking" aisle just doesn't have much of a flavor. But overall, like it. Picks to follow, as well as Double Chocolate Covered Peanut Butter Eggs.

Is 'vegan beef broth' a real thing? How do you distinguish it from 'vegan lamb broth' or 'vegan chicken broth'?

Either the word 'vegan', or the word 'beef' is being badly abused here.

Mush avocado and tuna together, and turn around in pasta - season to your liking, fresh oregano and pepper+salt works well.

Is 'vegan beef broth' a real thing? How do you distinguish it from 'vegan lamb broth' or 'vegan chicken broth'?

Either the word 'vegan', or the word 'beef' is being badly abused here.
Vegan chicken broth is a good deal like chicken broth. I've learned that celery seed is the key to mimicking chicken. Beef, it is beefish, about as much as beef bullion cubes.
