What Are You Eating Today?

Jack in the Box eggrolls. Mom made a special request, and for about the next year she pretty much gets what she wants.
I was eating at Jack in the Box while reading this! JitB has a Simpson's Halloween "Treehouse of Horrors" menu for a limited time. I had a "Krusty Burger of Terror". 🫤 Wish I woulda had eggrolls.

We order subs and pizza from a local family shop.

But I don't think that I've eaten anything from chain fast food in 20 years.

Does Jersey Mike subs count? I do them sometimes but they are 50% more expensive than the family owned shop and they don't have a freaking toaster for the sub rolls.

I've wondered about eggrolls ever since "With Six You Get Eggroll", many, many years ago. I've never seen them on the menu here.

Your post prompted me to google.

Spring rolls. OK

JitB eggrolls are some of the best I've had. It seems entirely absurd given that it's fast food, but they really are good. Enough so that when I go pick up chinese food, I'll swing by JitB instead of ordering eggrolls from there.

Today is what we call "Margaret Day" because Margaret is our favorite waitress at the best barbecue place in Georgia. I usually have chopped chicken, cole slaw and a baked sweet potato and instead of cornbread, I get a burger bun so I can make a nice sandwich. I usually order the large size so I can bring home half it to the dogs. Of course, the sauce is always on the side as I don't like much sauce and the dogs certainly don't need to eat it. Plus, on Wednesdays, if you're old, you get a tea or soft drink with your meal for free.

I guess tonight we'll have Amy's vegetarian dinners to make up for the big lunch. Or maybe baked salmon with fresh veggies.

Grilled pork steaks and corn on the cob for dinner last night. The steaks had been in the freezer for over a year so it was time to use them.

I made a pot roast with potatoes, carrots, and onions. Mmmmmm.

I'm going to use the leftover broth to make French onion soup.

One thing mum and dad are loving about where they are living now is the ginormous lunch they get. Most of the time they are given an extra portion each that they take back to their flat and have for dinner that night. They get these meals for around $45 a week each. Not bad considering they get roasts, pasta, chops… all sorts of foods.

My former post reminded me that my dear waitress Margaret has been in the hospital with pneumonia, hopefully out of ICU by now. I asked about her on Wednesday and when I was told she was in the hospital, knowing her health history, I asked if she had pneumonia and sadly I was right. Hopefully, she will recover, regardless if she's able to come back to work in the near future or not. We did meet another good waitress on Wednesday and I had my usual chopped chicken and sides. The dogs have enough left for one more treat of chopped chicken.

I made a pot roast with potatoes, carrots, and onions. Mmmmmm.

You remind me of a beef stew my mom used to make. Pretty much the same ingredients.

I wish I could find her recipe book with my old favorites.
My (bio) dad used to make "refrigerator stew", although it actually lived in the freezer. Basically, any moderately neutral left-overs went in the pot, and when it got about half full, he'd pull it out and simmer it for several hours. It was almost always tasty, but a truly random combination. It would frequently end up with beef, pork, and poultry in it, as well as green beans, peas, carrots, celery, potatoes, mushrooms, etc.

My mum used to do that too. I grew up with meals like steak and kidney and liver and bacon. You certainly kept quiet if you got one of those pieces.

I'm actually surprised that my mom didn't do that. She was so frugal. And it sounds yummy.

I'd do it but we have no room in the freezer. My wife buys meat on sale until the freezer is full and then buys more.
