What Are You Eating Today?

I found a plant "meat" that is pretty good.
Rollin Greens.
Made from pea protein.

This came out OK. Boneless chicken thigh on the bottom. Cut onions in the middle and potato slices on top with pasta sauce. Next time I'll probably microwave the potato for a bit before cooking. Once the potatoes were fully cooked the chicken was a bit overcooked. At least in was tender under all that moisture instead of dried out.

It was about 90 minutes at 400F.

Speaking of chicken. I made chicken cacciatore last week. First time I ever had it. I was unimpressed.

Surf & Turf for valentines day, cooked at home because I do steak better than most restaurants. Ribeye medium-rare, snow crab clusters (no king available), smashed potatoes, and corn.

Leftovers tonight!

One of my favourite salads for lunch.

The following chopped into roughly 1cm cubes.

Carrot, continental cucumber, celery, green apple, pear, capsicum, dill pickles.

Add well drained beans (red kidney and cannelloni beans this week, and a can of corn.

I make up this base on a Sunday and scoop out a serve adding an egg, some grated Parmesan and some dressing the night before and it’s ready.

Not eating, but drinking.

A friend from the UK is visiting for a few days, and he is a cider drinker. He (like me) prefers his cider very dry, but the Australian market caters mostly for sweet cider drinkers.

So tonight I am selflessly drinking ciders to determine which is driest.

The Mercury Original is surprisingly sweet; The Young Henry's Cloudy is a bit drier; But the winner in this round is Magners Original Irish Cider, which is actually made in Ireland.

I like Samual Smith's.

Taco pizza.
Frijoles with red and green peppers, onions.
Mexican blend cheese.
Lettuce and tomatoes after baking.
Best with my special crust, but I did not have any masa Fina.

I'm doing a post workout lunch shake:
Blender:
2 little vanilla protein shakes, low fat, low carb, 160x2 calories, 30gx2 protein;
2 light and fit yogurts, 80x2 calories, 0 fat, 0 added sugar, strawberry or vanilla or coconut, 12gx2 protein;
4 strawberries for fiber and carbs, also fat burning, 60 calories?;
1 large banana for healthy carbs, < 100 calories;
Handful of ice cubes.

Managed to lose 2 lbs past 2 weeks while maintaining muscle mass.

One of my favorite meals is Salad Nicoise made with fresh tuna fillets seared, plenty of pink to red in the middle. Used to do once or twice a year but family really likes it so it shows up more often. Instead of nearly laying the potatoes, beans, etc. in distinct areas, it’s all mixed together. Easier to serve family style.

Yesterday dinner cold steamed chicken, cooked carrots, snap peas, and Brussels sprouts with a sesame dressing.

Today breakfast scrambled eggs with fresh garlic, rice,. and beans with tomato sauce. Lunch regular old old turkey sandwich with lettuce, cumber, cheese and the same sesame dressing. A multigrain bread.

I buy some turkey at the store and it is lunch for five or six days. On Sunday I make rice and beans for the week and it goes into the refrigerator.

Came off the trail (dog hike) a few days ago feeling like I was starving. Truth be told I have not been feeding myself very well lately. Anyhow, there was a shiny new taco truck I had not seen before, right there on my way home. I gave it a try, and OMG it was SO good.
I thought we were supposed to have one on every corner by now?
I went back there yesterday and it was excellent again. I may go again today. Those Mexican cooks are fucking geniuses.

Especially if you are hungry.

We decided not to elect Hillary, though. America is on the McDonald's Diet.
Apparently, that's getting out of reach, too. Prices have increased 40% since 2019. Unfortunately, people's budgets have not similarly increased. Or fortunately, depending on how you view McDonalds. As a kid, that was virtually the only place my family ate out, other than potlucks at the homes of relatives. As an adult, for a good while, it was out of reach and then it was my go to place to stop for a quick lunch and bathroom break when traveling the 500 miles back to visit my folks. The advantages were: price, reliability of menu (necessity when traveling with young children), safety and cleanliness of bathrooms. Also easily off an interstate exit ramp. My father used to urge me to only stop at McD's because of the safety issue and he had a good point. There was always a gas station nearby, there were always people there--some local, some fellow travelers. It was family friendly so if my kids were not stone silent, it was ok (actually, they were always pretty good in restaurants). It would be a quick stop which also helped. Nowdays, if I stop for food, it's usually at a Culvers which serves better fish sandwiches. It's really the only time I eat fried food. And I've never in my life eaten a burger from McDonalds. Never. As a kid, I was given a choice and I always chose the fish. I didn't like burgers much anyway but some years ago, we got a charcoal grill and gradually gave up being vegetarians and hubby frankly makes the best burgers I've eaten, just as he makes the best pizza save for the pizza joint in the college town where we both went to school and met/fell in love. But his pizza and theirs are two different animals altogether. Both far beyond whatever I can get at a pizza joint within 500 miles (afaik--I don't get out much and I'm really loyal to hubby's pizza)
